Spaghetti with avocado sauce

This is one of my favorite meals. Ever. If avocados weren’t so damn expensive, I’d probably eat it every day of the week. It’s a great source of vegetables, fat and all around deliciousness. And in all honestly, I think I prefer it to tomato based sauces. It’s scrumptious served warm and makes a great pasta salad in the summer (use spiral pasta). Personally, I think this dish can do no wrong. Unless, of course, you’re not a fan of avocados. If that’s the case, you should probably stick to your runny tomato sauce and let me eat your portion.

SPAGHETTI WITH AVOCADO SAUCE (GFO)

2 ripe avocados
2 c. spinach leaves
1 carrot, peeled
1 roma tomato
1/2 small white onion
1-2 garlic cloves
1 tbsp lemon juice
1/4 tsp ground paprika
1/4 tsp ground turmeric
1/2 tsp fine seal salt
2 tbsp olive oil
1/4 c. almond milk
16 oz spaghetti noodles, cooked
1 tbsp dried basil
1 1/2 c. spinach leaves, chopped
6 tbsp pistachios, chopped
6 tbsp nutritional yeast
Salt and pepper, to taste

In a high powered blender (such as a Vitamix), combine the flesh of the avocados, spinach, carrot, tomato, onion and garlic cloves; blend until creamy. Add the lemon juice, paprika, turmeric and salt; pulse for 10-15 seconds then set aside. In a saucepan over medium-low heat, heat the olive oil and milk, then add the spaghetti noodles and basil; mix for 2-3 minutes, or until the noodles are coated. Divide noodles evenly between six plates. Layer, in this order: fresh spinach, avocado sauce, pistachios, nutritional yeast and salt/pepper.
Yield: 6 servings

  1. this sound absolutely incredible! I must try it… could you suggest anything that I could replace the pistachios with for the same taste/texture? (I'm unfortunately allergic *sigh*)

Can't say I'm an avocado fan, either. But I really haven't had any decent meal made with avocado. I've just tasted it straight out of the skin with a spoon. This looks like a mega taste bud explosion though. yummmm

  3. Blogger got all fancy, Izz! Yeah, I strongly dislike plain avocados – but they're absolutely delicious in this dish! Probably because their nasty ass taste is masked by other vegetables and spices. TRY IT!

And I am now kicking myself for selling my Vitamix awhile back because this recipe looks amazing. I can't eat tomatoes and thick white sauce is too rich so pasta has always been a little out of reach for me… until now. I love me some avocados! Must find a way to make this delicious recipe. : )

  6. Yay for Denver bloggers! Where are you in Denver? I'm in Cap Hill πŸ™‚ My lazy version of this recipe involves smashing the avocados with a fork, adding the spices and leaving out the remaining ingredients that need to be processed. So, you can totally make this despite the fact that you no longer have your Vitamix.

  7. Magic in my mouth! I made this tonight and it is definitely a keeper! I halved it to feed just my boyfriend and I. I don't have a high speed blender, so I went through 3 different appliances before finally getting a smooth mixture. lol Thank goodness I have an immersion blender that I used finish it off with. Despite the messy kitchen, it was well worth it! Next time it will go much more smoothly.

  8. Spaghetti is probably my favourite pasta "shape" I had a huge craving for pesto the last few days, will have to try this recipe, it looks so good and is probably better for you than pesto from a jar. πŸ™‚
